Your cakes burn on top but stay raw inside, or a roast takes far longer than it should. When food consistently comes out wrong, the problem is usually not your cooking – it is that the oven is not holding the temperature you set. Here is what causes an oven to run hot or cold, and how to fix it.

How an oven holds temperature

An oven does not heat continuously. A temperature sensor reads the inside, and the control switches the element or burner on and off to hold your set temperature. If the sensor reads wrongly, the calibration has drifted, or heat is escaping, the oven settles at the wrong temperature – even though the dial says otherwise.

Common reasons an oven temperature is wrong

1. A faulty temperature sensor or thermostat

This is the most common cause. The sensor (electronic) or thermostat (older ovens) tells the oven how hot it is. When it drifts or fails, the oven runs hot or cold – often getting worse over time. Replacing it restores accurate control.

2. Calibration drift

Over years of use, an oven’s calibration slowly wanders, so 180°C on the dial might really be 160 or 200. Many ovens can be recalibrated in the settings; older ones need the thermostat adjusting by a technician.

3. A worn or damaged door seal

If the rubber door gasket is torn or hardened, heat leaks out and the oven struggles to hold temperature – so it runs cool and cooks unevenly. A new seal is a cheap, effective fix.

4. A weak or failing element/burner

An element or burner that is on its way out may still heat, but not strongly enough to reach or hold the set temperature – so the oven runs cool and slow. You may notice it takes far longer to preheat.

5. A control-board fault

On electronic ovens, a fault in the control board can mis-switch the heating and throw the temperature off. This is a technician diagnosis.

6. Fan (convection) faults

In a fan oven, a failing fan means heat is not circulated evenly – hot spots form, and food browns unevenly even if the average temperature is right. (If uneven cooking is your main issue, that is often the fan or element rather than overall temperature.)

What you can safely check yourself

  • Test the real temperature. Put a standalone oven thermometer in the centre, set the oven to 180°C, let it fully preheat, and compare. This tells you how far off it really is.
  • Check the door seal. Feel around the closed door for escaping heat, and inspect the gasket for tears or hard, flattened spots.
  • Recalibrate if your oven has that option in its settings (check the manual) – useful for small, consistent errors.
  • Make sure you are preheating fully and using the right shelf and function – simple habits that fix a lot of “wrong temperature” complaints.
